The Mozzarella di Bufala Campana Dop is produced exclusively with fresh pasteurized whole milk, coming from buffaloes of the Italian Mediterranean breed registered in the appropriate registry and raised in the entire territory of the provinces of Salerno and Caserta. The surface, white porcelain in color, is smooth, never slimy or flaky, with a skin about one millimeter high, while the paste has a thin leaf structure. If compressed or cut, it releases a slightly serous, whitish draining, with the scent of lactic ferments. The flavor is delicate. – Since the real buffalo mozzarella from Campania PDO is free of preservatives, it must be stored in a cool place, in the fridge at no less than 4 ° C, and kept immersed in its liquid. Before consuming it should be left at least an hour at room temperature. If it has to be cooked, it is preferable to remove it from the preserving liquid and leave it in the fridge for a few hours, to make it drier and more consistent. Ideal on pizza with fresh “pachino” tomatoes and basil, in eggplant parmigiana or for a simple caprese.
