Parmigiano Reggiano (36 months) – The plant biodiversity of the stable meadow translates into the production of a balanced and complete forage, due to the presence of different plant species, with different nutritional properties. Numerous studies have been carried out on different types of cheeses and it was found that the floristic composition of the pasture meadow, which varies over the year and according to the environments, determines important variations in the diet of the animals and in the quality of the milk. The milk from Parmigiano Reggiano that is obtained from a polyphite meadow has different sensorial and nutritional specificities, especially if it comes from fresh forage.
Parmigiano Reggiano is a cheese without preservatives and digestible because naturally lactose-free.
