The family of Antico Pastificio Umbro has worked in the agriculture field for centuries. Their production of dry pasta has always been very traditional with a few modern extensions and renovations. The presentation of the firm comes from Their roots with authentic handmade high quality of traditional Italian pasta dishes. Antico Pastificio now offers rices, spices, cous cous, and an assortment of condiments. Their production is inspired by the tradition of Umbrian pasta makers already active at the beginning of the century and regained strength in the 1980s thanks to the initiative of Mrs. Fernanda Mariottini, portrayed as a child in the wheat fields cultivated by her family on the hills between Spello and Assisi. Their family has always operated in the agricultural world since human labor was the first resource and their hills were dotted with sheaves of freshly harvested wheat and haystacks ready for winter. The natural evolution of this agricultural vocation was the production of dry pasta. At first in a small workshop and then at the beginning of the 90s in the current factory, modernized and expanded in 2003. The processing is still very much linked to tradition: bronze dies, wooden frames, skeins (nests) composed by hand with the skill of the craftsman, slow drying and low temperature. All this, combined with the water from the springs of their region, makes it possible to obtain a rough, porous paste capable of capturing the sauce, an unmistakable texture and taste. Their pasta production is aimed at a market that is very attentive to the quality and authenticity of the artisan product, looking for the taste of home-made first courses on the shelf of its trusted shopkeeper.
