Founded in 1605, Giuseppe Giusti is the oldest producer in the world, after 17 generations of expert balsamic vinegar producers have brought Giusti is to be recognized as the point of reference for Balsamic Vinegar enthusiasts in Modena. Their balsamic vinegar is made in Modena and it’s certified PGI. You can eat it with meat, fish, icecream and cheese.
About the product
In addition to aging, the secret to obtaining a great balsamic vinegar naturally lies in the quality of the two raw materials: cooked must and wine vinegar. At Giusti their care is such that they can also be proposed individually. Wine vinegar is an aged product that ages for a long time in large oak barrels which soften its pungency and give it intense aromas and woody notes over the years.
The “Saba”, the Emilian name for cooked must, is instead a fresh product, in use in these lands already at the time of the ancient Romans. The must of the local grapes is cooked in the open air for many hours, concentrating it until it becomes particularly sweet and dense. Traditionally it goes well with cheese and for its sweetness it has been rediscovered in pastry for use on ricotta-based ice creams, creams and desserts.
