History

La Cà dal Nôn (Grandfather’s house) has been producing Traditional Balsamic Vinegar of Modena for generations. It is one of the oldest products in the province of Modena and certainly unique in the world. A vinegar made only with cooked must, aged in series of wooden barrels

Acetiaia

The Cà dal Nôn vinegar factory is located in Vignola, halfway between Modena and Bologna, housed in the attics of an ancient stone house whose origins are lost in the mists of time. If you come to visit us you will be able to see the attics with the great-grandfather’s barrels, the must cooking room, two beautiful secular vines, a whole collection of ancient tools to build the barrels.

The Vineyards

The Cà dal Nôn vineyard is located on the hills of Savignano sul Panaro, a few kilometers from the Vignola vineyard. In the vineyard we cultivate the typical grapes for the production of the traditional, Trebbiano, Lambrusco, Sauvignon and Pignoletto. If you come to visit us in the autumn you can watch the grape harvest and the pressing of the musts. From the vineyard you can enjoy a beautiful view of the city of Vignola, of Monte Cimone and, when the sky is clear, the gaze runs up to the Venetian pre-Alps. The vineyard is a stone’s throw from the medieval village of Savignano sul Panaro, a pleasant walk to discover a little corner of the Middle Ages that is little known and perfectly preserved.
