Aceto Balsamico del Duca can date back to the late 19th century, when the owner of a prestigious delicatessen, “Premiata Salumeria Grosoli”, established in 1891 by Adriano Grosoli, started the sale of self-produced specialties such as salami, sausages, meat, Parmigiano Reggiano cheese, Lambrusco wine, and Balsamic Vinegar. When Adriano’s died, he passed the company on to his son Mario and then to his grandson Adriano in 1972, who is now the current owner. In 1974 Adriano, decided to devote all his energy exclusively to the production of Balsamic Vinegar of Modena. Later Adriano’s daughters Mariangela and Alessandra entered the business management of the firm and today, the Grosoli family continues to produce with the same passion and experience passed on through four generations. The family decided to build new premises which were opened in 1992 to meet the requirements for more space due to the increasing demand of Balsamic Vinegar of Modena, and this was expanded in 2004. Adriano Grosoli chose the name “Aceto Balsamico del Duca” in order to link his product with the prestige of Duke Francesco I D’Este; one of the most famous producers and consumers of Balsamic Vinegar of Modena, a favorite dressing of the Estense court.

Balsamic vinegar is the fruit of Italy’s generous lands and the wise tradition of our ancestors. The fertile area of the ancient Duchy of Este proved to be the ideal cradle for the birth and maturation of this precious nectar, in which each drop evokes the grapes of the typical vines, with their intense colour and unique aromas, the hills on which the vines grow vigorously, the sultry and humid summers, as well as the harsh winters, which wrap them in a blanket of fog or snow. The vineyards dedicated to the Balsamic are the ones that are typical of this land, mainly Lambrusco, Trebbiano, Sangiovese, Fortana, Ancellotta, Montuni and Albana, together with the rarer Spergola and Berzemino. Here, the grapes grow luxuriant and sweet to the right point, with perfect acidity and unique features. So, the ancient “knowledge” will transform the grape juice, obtained by gentle pressing, into fragrant must, which will be cooked with care, to become the precious ingredient for the balsamic. Maturing during the hot summers, with lively fermentation, the product will be enriched with aromas of different woods, while during the cold winters it will rest in barrels, acquiring clearness.

Modena is also a land of other excellences such as Parmigiano Reggiano PDO, Lambrusco, Prosciutto di Modena PDO, accompanied by the beautiful singing of the tenor Pavarotti and unique artistic sites. Historical and medieval villages are the corolla of a city which hosts a UNESCO site that amazes tourists. Aceto Balsamico del Duca represents the experience of five generations, employing original family recipes, handed down from father to son. With constant dedication, it produces an excellence with an inimitable taste, appreciated all over the world. Today, the historic site of Via Medicine 2340 in Spilamberto, is dedicated to the ageing of the precious Traditional Balsamic Vinegar of Modena and preserves hundreds of precious small barrels. Consisting of an ancient brick-kiln built approximately in 1600, it has recently been renovated and made available to the many visitors who wish to discover the secrets of this unique product. This site often hosts many cultural and recreational events, in the evocative setting of the ancient barrels, still in full operation. In 1992, a new plant was inaugurated, further enlarged between 2004 and 2008. It includes a functional office building and visitor reception and a modern shop for direct sales, in a work context designed and built for the worker. Inside the new site, there are the big oak casks, where the Balsamic Vinegar of Modena matures, and the different production lines. Over time, Aceto Balsamico del Duca has positioned itself at the top of quality Balsamic production, proposing eco-friendly products, such as the Organic line, and emphasizing the strong link to the land of origin, with “Solo Modena” line. This short supply chain product, obtained entirely from grapes from the province of Modena, was the winner of the “2009 – 2010 Corporate Social Responsibility Award” of the Province of Modena.

Aceto Balsamico del Duca is synonymous with quality and elegance and represents the city of Modena and its territory worldwide at the major international fairs. However, it is a historical reality that is continually renewed; the Quality Certifications that the company has been committed to maintaining and the development of new products, designed to meet the demands of an increasingly demanding consumer, are evidence of this. After 120 years since the founding, the idea of making the shop, from which the great history of the family began, revive started to take hold: “La Bottega di Adriano Grosoli”, which today is presented in a modern way, with the possibility of online purchases. In 2016, Aceto del Duca reached a double goal: on the occasion of its 125th anniversary, it entered the register of the Italian Centenary Companies Association.
